Innovation served up to Spanish foodservice sector

Spains foodservice professionals were given a taste of innovative cuts of Quality Standard Mark (QSM) beef and lamb at a major industry show.

The beef and lamb division of the Agriculture and Horticulture Development Board (AHDB), EBLEX, showcased its cuts development work at the Salon de Gourmet in Madrid.

Representatives from the foodservice sector and members of the public were joined by British Ambassador to Spain, Simon Manley, and Spanish Agriculture Minister Isabel García Tejerina on the EBLEX stand.

They sampled recipes using Flat Iron steaks, Ranch steaks and Picanha, as well as rump, rack and fillet cuts of lamb. Chefs took away some ideas about how to use different cuts of beef and lamb on restaurant menus.

Susana Morris, EBLEX export manager, said: “The response from the foodservice industry professionals and the public was excellent and their reaction to our products has been extremely positive.

“The variety, versatility and quality of the cuts of meat allow chefs to innovate and offer new dining options to their customers, with the lamb dishes, in particular, proving to be a big hit.”
